
Roasted Pumpkin Soup
Flavorful, creamy, and easy to prepare. The Pumpkin Soup is the perfect dish for a rainy and cold winter day. It is always recommended to purchase high-quality ingredients from local farm markets in order to get the best results.
Ingredients
- 1 kg Cubes of pumpkin
- 1 White onion
- 1 Garlic bulb
- 100 g Cream
- 2 tbsp Olive oil
- Pinch of nutmeg
- 800 g Vegetable broth
- Pumpkin seeds
- Prosciutto
- salt
- Pepper
Instructions
- Preheat the oven to 200 deg C. In a baking tray, arrange the pumpkin cubes, the onion cut in 4 and the garlic bulb cut in half. Season with salt, pepper and nutmeg, drizzle the olive oil on top and bake for 35 minutes.
- Pour the pumpkin cubes into a blender along with the peeled garlic, onion, heavy cream, and vegetable broth.
- Adjust the flavor with salt and pepper. Serve and add prosciutto, pumpkin seeds and a little cream on top.
- Accompany with toasted bread of your choice.
